Do u have left over bananas. Are you bored of normal pancakes? Check out this recipe, I bet u will like this a lot. Normally my hubby don’t like pancake. But after trying this, he loves to have them every morning. This is easy to make . No need to wait for fermentation. U don’t need much time too. Just mix them and pour them into the pan and ta da. Serve hot .
Bananas are high in calories. They contain 110 calorie in one banana. A good source of potassium, dietary fibre, magnesium, vitamin B6 and C. Naturally contain fat, cholesterol and sodium free.
Maida. : 1 cup
Sugar. : 2 tbsp
Baking Powder. : 1 tbsp
Salt. : to taste
Cinnamon Powder. : 1 1/2 tbsp
Banana. : 2
Egg. : 1
Milk. : 1 cup
Oil. : 2 tbsp
Butter. : to grease the grill
Mix all the dry ingredients and set aside.
Mash the banana’s and set aside. Do not mash too much. You should get the chunks when you bite a pancake.
Now beat the egg and add milk and oil. Add the mashed banana and make sure it just coated with the egg and milk mixture. Do not beat them .
Mix everything together. As I said do not over mix them, just make sure the dry ingredients disappear and make a dosa batter consistency. Do it very slowly. The chunks of the banana is the key ingredient in this recipe.
Apply butter onto the skillet/ grill / pan. When it’s hot pour one scoop of thick batter onto the grill. Do not cover them with a lid, flip it over and cook the other side as well.
Enjoy the soft, chunky and delicious Banana Pancake. Just top it with butter and maple syrup.
