Butternut Squash. : 3/4
Green Chillies. : 5
Coconut. : 2 tblsp
Mustard seeds. : 2 tsp
Turmeric. : 1 tsp
Asafoetida. : A pinch
Curry Leaves. : 1 sprig
Oil. : To Temper
Cut Squash into small cubes ( size of paneer cubes ) and keep aside. Heat oil in a pan and add Muster seeds, Turmeric, Asafoetida, Curry leaves and Green chillies.
Add sliced squash and fry for 30 sec and then add little water to the squash and cook till it get soft. When it’s done add coconut and serve hot with chappathi / roti / rice.
Enjoy the delicious squash fry which can be prepared in minutes.
You can add or reduce Green chillies according to your taste. I like my dish to be little spicy , that’s y I added 5 nos of Green chillies.
